 If you are like me you need to meal plan a week in advance.  I am always lacking inspiration.  I have to sit for hours with paper and pencil and then things will come to mind and I scribble and erase until it's ready.

Maybe if I share with you my menu....You will share yours and boom...we will all be inspired for weeks on end.  (if some of the links to the meals say suspicious link...just ignore it...her site is legit)

This week

Monday:  Cream Cheese Chicken (crock pot) and Pasta 



This was fantastic...a must to make again.  We used some rotini pasta to help mop up the sauce

Tuesday:  Meatballs in Mushroom Cream Sauce and Creamy Mashed Potatoes



Again another winner!   I have my own mashed potatoes that rock...so not sure what her version was.  I just add lots of butter, sour cream and milk to mine when I blend!

I had to quadruple the recipe...so it took forever to make the meatballs!  I ended up cooking the sauce in my electric skillet and a pan on the stove.

Thursday  Slow Cooker Beef Carnitas



Friday  Brisket Quesadillas

Recipe...
I'm going to slow cook a brisket all day....
I'll shred the brisket and then make an assembly line for everyone to add their own foods to the quesadillas

I'll use my Cuisnart Panini/Griddle Press and make yummy goodness

Saturday  Stuffed Pizza Rolls

One last thing to add?  I've made 2 batches of this sweet goodness too
The kids devoured like crazy.

Yum! Yum! Yum! I want to eat at your house every night!

Our menu is BORING! Monday: grilled wild salmon, brown rice pilaf and asparagus. Tuesday: Grilled pork chops, brown rice pilaf (left over), broccoli and salad. Wednesday: out to eat at Mexican Restaurant. I'll be out of town for the rest of the week, but usually would be grilled chicken or pork, some vegetable and either rice or roasted potatoes. EVERY WEEK! Occasionally we change it up, but not much! Damn healthy(er)eating!

We had pork chops on Sunday and sliders Monday, but I have no idea what to cook tonight! Oops!
