I love sweets.  I am learning everything in moderation and NOT to give up a passion of mine

I did NOT sample my St Patrick's Day cookies, but I did sample the bottom half half of these bad boys this morning with my coffee



While at the gym the other day I saw Ina Garten making these and I knew I wanted to try these for the kids.  I ordered the pans on amazon ($7 a piece and free prime shipping baby) and broke out and made them this morning!

I thought I would put the batter in a pastry bag and pipe in...UH NO.  It was just easier to use a spoon and do it that way. 
Another thing not to do?  Don't fill to top.  My hole filled in and I needed to use my apple corer to remake the hole.  (live and learn)

These tasted perfectly springy perfect and I can't wait to find other recipes for plain w/a chocolate ganache icing

Baked Cinnamon and Sugar Donuts
 
Ingredients
  • 2 cups AP flour
  • 1½ cup sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • ½ tsp. kosher salt
  • 1 large egg
  • 1¼ cup milk
  • 2 tbsp. unsalted butter, melted
  • 2 tsp. vanilla extract
For toppings
  • ½ cup butter (1 stick), melted
  • ½ cup granulated sugar mixed with ½ tsp. ground cinnamon
Instructions
  1. Preheat oven to 350 degrees. Spray doughnut pan with non-stick cooking spray
  2. In a large bowl whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt. Then in a small bowl whisk together the egg, milk, melted butter and vanilla extract. Take the wet ingredients and add them to the dry ingredient bowl. Mix together until just combined.
  3. Spoon the batter into prepared donut pans filling about ¾ths the way.
  4. Bake for 15-17 minutes until doughnuts spring back when poked.
  5. Let doughnuts cool for 5 minutes.
  6. Prepare the cinnamon and sugar mixture
  7. Dip both sides of donuts in melted butter and then sugar

To let you know we all mess up on our diets?  Yesterday I ate about 1/2 cup of M&M's and a handful of the kids Cool Ranch Doritos and a tamale yesterday.  I did increase my water and I did my cardio though...and still lost a lb!  So just do better the next and keep on keeping on!
